Lemon Jelly Layer Cake

and Cupcakes



Ever heard of a cake or frosting made of jelly (jello)? Well it does exist and here´s the evidence!

¿Habéis oído hablar de un tarta o frosting hecho de gelatina? Bueno, sí existe y aquí está la prueba!




To be honest I don´t know how it came to be a Jelly (Jello) Cake but I remembered vaguely doing a search for lemons.. that´s when I got the idea to do a jelly frosting, which led me to a cake recipe made of jelly as well ;-)  This frosting couldn´t be easier to make! The trick with adding jelly (jello) powder to your cake batch is to make sure you add extra liquid.. so if you want to you can take your favourite recipe and adjust it slightly. The jelly (jello) adds a zingyness (if there is even such a word..) to your cake and teamed with the jelly (jello) frosting, the flavour really comes through!

Para ser honesta, no sé cómo llegó a ser una tarta de gelatina pero recordé vagamente hacer una búsqueda de limones .. ahí es cuando me vino la idea de hacer un frosting de gelatina, lo que me llevó a una receta de una tarta hecha de gelatina ;-) ¡Este frosting no podría ser más fácil de hacer! El truco al añadir la gelatina en polvo a tu masa de la tarta es para asegurarse de que añada líquido adicional .. así que si quieres, puedes coger tu receta favorita y ajustarla ligeramente. La gelatina agrega un sabor ácido a la tarta y se asoció con el frosting de gelatina, el sabor realmente van muy bien!



To decorate the cake I added some sour striped coloured candy strips to the bottom of the cake.. I´ve seen these all over the internet used for rainbows (like what I did with the mason jar on these photos) but I wanted to do something different on this cake.. and I think it worked and that it added an element of "cuteness".. I´m using many "ness" words tonight.. :-)

Para decorar la tarta añadí algunas rayas en forma de tiras de caramelo amargo en el fondo de la tarta .. He visto esto en muchos sitios en internet usado el arco iris (como lo que hice con el frasco de conservas en estas fotos), pero quería hacer algo diferente en esta tarta .. y creo que funcionó y que añade un elemento de "monería" ..

INGREDIENTS


for the cake/cupcakes: 

(makes 10 cupcakes & 4 x 12 cm molds)

  • 250g butter without salt at room temperature
  • 1 cup granulated white sugar
  • 1 & 1/2 pack of jelly (jello) powder
  • 4 eggs
  • 4 cups of self raising flour/4 cups of regular flour + 4 teaspoons of baking powder
  • pinch of salt
  • 1 cup of full cream milk

for the frosting:


  • 2 packs of lemon jelly (jello)
  • 2 egg whites
  • 2 teaspoons of vanilla essence
  • 1 & ½ cup white sugar
  • 1 cup of boiling (not hot) water

METHOD


for the cake/cupcakes (makes 10 cups):

Mix together the butter, sugar and jelly (jello) until light and fluffy. Add the eggs 1 x 1 and mix well. Add the flour and milk. Don´t overmix the batter. Bake the cupcakes for 25 min & the cakes for 35 minutes at 180ºC.

for the frosting:

Add all your ingredients in your stand mixer bowl (no plastic bowls, only stainless steel or glass). Start your mixer on high and immediately add your boiling water (it needs to be boiling as we are working with raw egg whites). Cover with a towel and continue to beat on high for 5 minutes. Should you live in a high humid area (like I do), it´s best to keep the frosting refrigerated. Now it´s time to FROST!




I encourage you guys to try this recipe, my favourite.. by far.. is the frosting.. I could eat spoonfulls of it (and to be completely honest.. I did..).. ;-)

Les animo a intentar esta receta, mi preferido.. con diferencia.. es el frosting.. Podría comer cucharadas llenas (y honestamente.. lo hice..) .. ;-)
