- 300g of unsalted butter at room temperature
- 1 teaspoon of vanilla essence
- pinch of salt
- 250g of sifted icing sugar
- 1/2 cup of butterscotch sauce
- salted peanuts
METHOD
for the cake batter:
Pre-heat your oven to 175ºC and grease your 20cm mold. Mix your oil and sugar together in your blender and then add your eggs one by one until well mixed. Now add your vanilla essence. Sift your dry ingredients together and add to your egg mixture. Finally add your peanut butter. Pout the butter in your prepared mould and bake for aproximately 45 minutes.. (if you divide the batter your baking time will be less). Let it cool properly before using for assembly. I normally leave mine in the fridge for about 15 minutes (after cooling to room temperature) before using it.
for the butterscotch sauce:
Melt your butter in a sauce pan on the stove, then add your sugar and the rest of your ingredients. Bring to boil at medium heat and let simmer for aproximately 5 minutes until the sauce has thickened. Leave to cool & thicken further at room temperature.
for the frosting:
Mix your butter and icing sugar together at high speed until light & fluffy (make sure that you start slow not to have icing sugar all over you and your kitchen..lol). Now add your vanilla essence and butterscotch sauce and make sure all the ingredients are well incorporated.
HOW TO ASSEMBLE THE CAKE
Cut your cake into 2 (if like me you used only 1 mould) then fill your cake with buttercream frosting and make sure it´s evenly spread, drizzle some more butterscotch sauce over and sprinkle over a good measure of salty peanuts ;-) Top with your next layer and do the exact same.. Your cake is ready to be devoured.. YUM!!
I´m excited to say that my photos are getting better, I still haven´t managed to save-up for that camera I told you guys awhile ago I really want but found new software for editing on the web and it has already made a world of difference.. I can´t wait to see what a better camera would do.. when that happens I can see myself doing summersaults all over my house.. (well not really but I´ll be really really happy.. lol)
Estoy tan emocionada de decir que mis fotos son cada vez mejores, todavía no he logrado ahorrar para la cámara que realmente quiero que les comenté hará un tiempo, pero encontré un nuevo software para editar y se hay un mundo de diferencia .. No puedo esperar para ver lo que una cámara mejor pueda hacer .. Me veo haciendo piruetas por toda mi casa cuando eso suceda .. (bueno, no realmente, pero voy a estar muy, muy feliz .. jaja)
